Scott, As a "Coeliac", I am now unable to drink beer, consequently my bulk drink is cider, my recipes are "hit & miss" depending upon availability of fruit.I have Bramley, Russet, Worcester, and Golden Delicious ,in my garden, but found best results, by buying "cider" apples from farm shops, in Worcestershire & Herefordshire, and adding "crab apples" and a few Bramleys. Wash 16-20 lbs, mixed apples in sulphited water,then either freeze for 48 hours, or, chop with axe, put to press, squeeze, collect juice approx 1 gall, or ,from frozen allow to thaw, press collect, better juice yield this way, also less hard work! Bucket/primary ferment 24 hours,using Lalvin EC-1118 or 71B-1122 or similar yeast, rerack to demijar, under airlock. With pulp residue, I add "Rohament P", to break down remaining pulp, 2 lb sugar, 2.5 pints water, 2.5 pints Supermarket pure apple juice, yeast, ferment in bucket for 4 days, rerack to demijohn-there u r , another gallon,
